Salmon with Avocado Salsa

Time: 20 minutes

INGREDIENTS:

For the Salmon:
4 salmon fillets, skin-on or skinless
Salt and pepper, to taste
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cumin

For the Avocado Salsa:
2 ripe avocados, diced
1/2 cup cherry tomatoes, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 jalapeño pepper, seeded and finely chopped (optional, for heat)
Juice of 1 lime
Salt and pepper, to taste

For Serving:
Cooked quinoa, rice, or salad greens

Serves: 4 People

INSTRUCTIONS:

1. Preheat the Oven:
Preheat your oven to 400°F (200°C).

2. Season the Salmon:
Pat the salmon fillets dry with paper towels. Season both sides of the fillets with salt and pepper.

3. Prepare the Spice Rub:
In a small bowl, mix together the paprika, garlic powder, onion powder, and cumin. Rub the spice mixture evenly over both sides of the salmon fillets.

4. Sear the Salmon:
Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the salmon fillets to the skillet, skin-side down if they have skin. Sear for 2-3 minutes until the skin is crispy and golden brown.

5. Bake the Salmon:
Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the salmon is cooked to your desired doneness and flakes easily with a fork.

6. Make the Avocado Salsa:
While the salmon is baking, prepare the avocado salsa. In a medium bowl, combine the diced avocados, cherry tomatoes, red onion, cilantro, jalapeño (if using), and lime juice. Season with salt and pepper to taste. Gently toss to combine.

7. Serve:
Once the salmon is done, remove it from the oven. Serve each salmon fillet topped with a generous spoonful of avocado salsa.

8. Optional:
Side Dish: Serve the Salmon with Avocado Salsa alongside cooked quinoa, rice, or a bed of salad greens for a complete meal.

9. Enjoy:
Serve immediately
