Cucumber Yogurt Salad

Time: 55 minutes

INGREDIENTS:

2 medium cucumbers, peeled and thinly sliced
1 cup plain Greek yogurt
2 cloves garlic, minced
2 tablespoons fresh dill, chopped
1 tablespoon fresh lemon juice
1 tablespoon olive oil
Salt and pepper, to taste

Serves: 6  People

INSTRUCTIONS:

1. Prepare the Cucumbers:
a. Peel the cucumbers and thinly slice them into rounds. You can also use a mandoline slicer for uniform slices.
b. Place the sliced cucumbers in a colander set over a bowl and sprinkle them with a little salt. Let them sit for about 10 minutes to release excess moisture, then pat them dry with paper towels.

2. Make the Dressing:
In a mixing bowl, combine the Greek yogurt, minced garlic, chopped dill, lemon juice, olive oil, salt, and pepper. Stir until well combined.

3. Combine the Salad:
a. Add the sliced cucumbers to the bowl with the dressing.
b. Gently toss the cucumbers until they are evenly coated with the yogurt dressing.

4. Chill and Serve:
a.  Cover the bowl and refrigerate the cucumber yogurt salad for at least 30 minutes to allow the flavors to meld together and the salad to chill.
b. Before serving, taste and adjust the seasoning, adding more salt, pepper, or lemon juice if needed.

5. Garnish and Serve:
a. Optionally, garnish the cucumber yogurt salad with additional chopped dill before serving.
b. Serve the salad chilled as a refreshing side dish.
