INGREDIENTS:
For the Charred Bell Peppers:
4 large bell peppers (a mix of colors for visual appeal, such as red, yellow, orange, and green)
2 tablespoons olive oil
Salt and pepper, to taste
For the Herb Dressing:
1/2 cup extra virgin olive oil
2 tablespoons fresh lemon juice
1/4 cup finely chopped fresh herbs (such as parsley, cilantro, dill, or a combination thereof)
2 cloves garlic, minced
Salt and pepper, to taste
Serves: 6 People
INSTRUCTIONS:
1. Char the Bell Peppers:
a. Preheat your grill, broiler, or stovetop grill pan over medium-high heat.
b.Prepare the peppers by slicing them into large, flat panels, discarding the seeds and stems.
c. Brush each piece lightly with olive oil and season with salt and pepper.
d. Grill the peppers for about 4-5 minutes on each side, or until they are nicely charred and tender. If using a broiler, place the peppers on a baking sheet and broil, watching closely to prevent burning.
2. Make the Herb Dressing:
a. Combine the dressing ingredients in a small bowl. Whisk together the extra virgin olive oil, lemon juice, chopped herbs, minced garlic, salt, and pepper until well combined.
b. Taste and adjust the seasoning of the dressing as necessary.
3. To Serve:
a. Arrange the charred bell peppers on a serving platter.
b. Drizzle the herb dressing generously over the warm bell peppers.
c. Serve immediately, while the peppers are still warm, or at room temperature to let the flavors meld together.
